Another morning in the pool gone bad. Threshold 200s. 12 of them. Someone kill me. They are so hard. I just wanted to get through them and I did but it was not pretty. We are testing next week and I am pretty sure I have gone backwards in my swimming since IMAZ.
I think that it is due to only swimming 2x a week. Lets just call it that and be done with it! I am not the only one that feels crappy on threshold days. I am just glad it is not just ME!
I had a good run afterwards though. Hill repeats on Terwilliger always makes my feel stronger. I am pretty sure that my legs were still wiped out from Tuesday but I still did good.
Quickly after our last ladies night, Sherrie requested that I make a peanut butter cheesecake she saw on Facebook. I said sure. I do not usually take requests but this looked DELICIOUS!

After having a sweaty good time in the pool and on the road I came home to make this bad boy. The “official” name is: Peanut Butter Cup Brownie Bottom Cheesecake. I did not realize there was multiple steps and it was not going to be as easy as I originally thought.

You first make a brownie bottom layer. Proceed to put chopped peanut butter cups, chocolate chips, and peanut butter chips as the next layer. Bake the cheesecake layer…in a hot water bath. That was tricky because I did not have a pan big enough to get the springform pan in it comfortably. Greg luckily had a disposable pan that I got to “kind of” work. (I think that is also the trick when trying to make a cheesecake that does not crack) WOW…You learn something new everyday! Lastly decorate!
The recipe says there will be more cheesecake layer then you need. Why would I want a bunch of extra cheesecake filling? Now everyone knows that you are supposed to go exactly as a recipe calls for when baking? Well I strayed away from that rule big time. I cut out 8oz of cream cheese, 1 egg, some sugar, and just used the rest of the jar of peanut butter. The recipe also says DO NOT use natural pb. That is all I have and was not going to buy Skippy just for the fun of it. I was a little nervous that something would be wonky but sure as shit it turned out just about PERFECT!
It also says that you will have a lot of extra decoration. I cannot figure out why she could not just figure out the measurements with out all the extra! Whatever I am not a recipe connoisseur. Obviously because I get all my recipes elsewhere! I just used about 1/2 of the chocolate and pb chips and there was still probably too much. It was Amazing. Everyone was happy except the non-cheesecake and non-chocolate eaters!
Another swim, run, and ladies night in the books. Good Times!!

That cake looks amazing – and if I had just done 12 threshold 200s I’m pretty sure I’d be hungry enough to eat the whole thing!
Right?! I am so ravenous after theshold swims!! It was delicious and I was lucky enough to have a piece leftover!!
